Ready for a low fat, high protein meal? In this newsletter, we will bring you a baked chicken with aromatic fresh basil.  There are many types of basil varieties, but 3 types are most common used in Asian cooking: Thai Basil, Lemon Basil and Purple Basil (Holy Basil), all are aromatic.  Thai Basil has slightly serrated green leaves on purple stems, it has a sweet anise flavor. Lemon basil has small green leaves with a lemony scent and peppery flavor. whereas purple basil has narrow and dark purple tinged leaves wit ha pungent, clove-like taste. I would recommend to use the lemon basil for below recipes, but you could also try it with others or a mixture of them. If any are unavailable, replaced with sweet basil or fresh coriander.

 
Thai Basil Lemon Basil Purple Basil

 

Basil is famous of its anti-inflammatory compound. It's believed to fight bowel inflammation and rheumatoid arthritis. It is also known to have high antioxidant properties when used as an extract or oil. Antioxidant are help to prevent cell damage and thus considered as an anti aging ingredient.

 

Ingredients:

  • 10 boneless skinless chicken breast (about 2 1/2 lbs.)

  • 3/4 cup low-fat yogurt

  • 1/4 cup finely chopped fresh basil

  • 2 teaspoons cornstarch

  • 1 cup bread crumbs

  • 2 tablespoons grated Parmesan cheese

Method:

  1. Arrange chicken in single layer in baking dish. Combine yogurt,
    basil and cornstarch; mix well and spread over chicken.
     

  2. Combine bread crumbs with Parmesan and sprinkle over chicken.
    (If making in advance, cover and refrigerate for up to 6 hours.)
     

  3. Bake chicken in 375 degrees oven for 30 minutes or until chicken
    turn white.
